Configuring a mirrored SQL Server 2008

We recently set up a new 5.0 vCenter using MS SQL Server 2008 as the data base, running on a seperate physical sytem.  We want to bring up a 2nd 2008 SQL Server on a virtual machine for redundancy.  The MS SQL stuff I'm looking at (SQL Server 2008 Unleashed) makes it look that you actually need *two* additional SQL Servers, one acting as a "witness" box, essentially a "tell me three times" architecture with the witness system having the deciding vote as to which copy of the database is in the best condition.

Has anybody actually done this?  Done anybody have an opinion as to whether or not it is actually necessary?

Ever thought of trying Microsoft clustering for SQL?
