I do not have a drawn visio diagram but veeam does have a set of free Visio objects representing VMware objects - http://www.veeam.com/vmware-esx-stencils.html

I supposed your'e looking for a real world ESX 3.5 diagram and this can varies depends on the requirements, but if you understand the ESX 3.5 and design/architecture concepts than using Visio stencils provided and you can sit down and draw any networks/diagram you wish and its very straight fordward. Here is a quick example of what components and ports communicate and use it toward your drawings. I have several ESX 3.5 & ESX 4.0 architecture diagram for my clients but that would be strictly confidential and wouldn't post it here. For more information, download ESX 4.0 guides online.

I just want to note that the set of Veeam Stencils was recently updated. Now it supports Microsoft Visio 2003, 2007 and 2010 and contains icons for VMware / Hyper-V hosts, VMs, storages and so on.
