what is the maximum number of datastores in a Vcenter system?

I had a look at the configuration maximums in http://www.vmware.com/pdf/vsphere4/r40/vsp_40_config_max.pdf , it lists100 in the SMI-S section

The SMI-S section list max number of ESX hosts as 100, while it is 300 in the vcenter server maximums. Should I be looking in the SMI-S section?

Only if you plan to use SMI - if not go with the maximums for vCenter - and you are correct to look at the host count since it is the ESX hosts that comunicate to the SAN not vCenter -
