Did you perhaps deploy the virtual machines as Thin disk? This would mean that they would be allocated the max amount of diskspace you had set but would take up only what was being utilized. Perhaps some screen shots would help us understand the environment.
Are the disks you deployed in thin provisioned format? If, so it won't update until the actual disk space is used up to the point of your set configuration for the machine.
