It should work as the mac mini has standard hardware. Apple requires you have the server license to virtual osx.

I was thinking about it, tell me how it works.

This is not true. Apple hardware is not "standard" PC. It is proprietary. It's just that Apple now uses an Intel CPU instead of a PowerPC which is why x86 & x64 virtualization is possible.

For results, see this reply to the OP's other post. (For the lazy, ESX does not install directly on the Mac.)
