Windows 8.1 works fine with ESXi 5.5, just choose the "Microsoft Windows 8 (64-bit)" Guest OS Version

Wrote up the procedure and recorded a video walk-through here:

Using ESXi 5.5 to create “Golden Master” Windows 8.1 template VM with ease-of-use tweaks for your lab

The only minor quirk I've noticed so far was that the vSphere Web Client kept advising that I install VMware Tools, even though I had already installed Tools, which otherwise seem to function fine.

1) Anybody else noticing the same quirk with Tools?10-21-2013 11-55-00 AM.jpg

2) Any other feedback/observations, which I can use to further refine the documentation and/or process?http://www.tinkertry.com/wp-content/uploads/2013/10/vSphere-Web-Client-view-of-the-Windows-8.1-Template.png

I had the same issue, but the reboot did not solve the it. Windows mentioned a complaint about the VMCI bus device, but it looked OK in device manager. I tried a repair installation of vmware tools which corrected the issue for me.
