I have currently set-up a simple raid-1 back-up server that runs FreeNAS. I created a Datastore on it called Backups and created an additional 1TB D:-drive for the Veeam Windows Server. An alternative would be to add a drive via iSCSI in the Windows 2003 Server virtual machine, so storing back-up would not go via VMWare.
Is this a good way of storing back-ups for Veeam? Should I do it differently?
Also: how affraid should I be of Windows overwriting signature for the VMFS?
FreeNAS is defenately the way to go. AND it is... FREE!
The only thing I do at work is switch off the services not needed. I do run 2 FreeNAS servers at home. RAID5/4*2TB/MAC and it is quite stable. It never seem to fail.
Kind regards

ps - At my office I ran into space-problems with not enough allocated space for snapshots for VEEAM backup. (Check my postings...) This could be rectified by moving the DATASTOREs (adding more disks)...
You may go for open filer, as its having so many good features and i am using in without any problem.
Find the below link to know about more of its features and step by step configuration.

You can also try to look on trainsignal videos from David Davis where he explains so much about the feautres and configuration.
You can also use a cheap hardware NAS.

Or any PC running Debian/Ubuntu/Fedora/other-Linux and configure an NFS share. Even an old Pentium-4 will sustain about 30MB/s like this, and anything dual-core will easily saturate GbE provided the disks can keep up.
