How can I update VMware ESXi 7.0.1 to the last version?

There are multiple option to do that, depending on your environment, and your preferences.
You can update/patch the host using Update Manager, performing an interactive update using a CD/ISO, or using the esxcli utility from the command line.

My VMware ESXi version is 7.0.1 and I want to download and install it as offline. How can I download the update manually?

Patches can be downloaded from https://customerconnect.vmware.com/patch (logon required).
If you don't have an account that's entitled for downloading patches, you may look for a newer free/evaluation ISO image, and run an interactive update.

My VMware ESXi version is "7.0.1", but on the "Product Patches", I see "7.0". I downloaded "VMware-ESXi-7.0U3a-18825058-depot", is it the last update?

To patch/update a vendor customized installation to a newer version or "Update" release, use the new vendor customized image, or offline bundle from https://customerconnect.vmware.com/en/downloads/info/slug/datacenter_cloud_infrastructure/vmware_vsp...

Please note that due to an issue in the 7.0 Update 3 build, you should update/patch that build with the 7.0 Update 3a patch immediately after installation.
