I am experiencing slower than normal windows file transfers between VMs but not sure why.
My setup is as follows...
Datastores: 2 x Samsung 840 SSD in RAID 0
Physical NIC: Intel I210 & I217 1Gbps
MTU set to 9000 on vswitch0
Jumbo frames set to 9000 on Guest NICs (VMXNET3 Auto-Neg 10Gbps)
File copy between two VMs (Win2012 R2 & Win8.1) tops out at 90-110 MB/s.Whilst that isn't bad, I would have expected closer to 500MB/s?
ASSD speed test on the VMFS/SSD is around the 1000MB/s read & 800MB/s write so I know the storage isn't the bottleneck here.
Any help/tips to help improve the network performance between two VMs on the same host would be greatly appreciated.

I think you mis-understand about speed copy.
With your system with physical NIC 1Gbs is speed data tranfer same 1000Megabit/second = 125MegaByte/second
And with actually 110Mb/s I think is OK, no problem in here.
If you need improve speed, can you change physical NIC to 10Gbs
