Using Convertor for backup. What Destination product?

Ok so I want to create a backup of my vm on the free hypervisor, I have been told I can use hypervisor to do this,  but a little stumped here, I am just going to use the source as powered on machine so I dont have to turn the vm off but when I get to the "destination part I am unsure of what to pick, it only has workstation, server, fusion, etc nothing about esx esxi?   are they all the same format?  which one do I choose so in case I have to rebuild this server with the free hypervisior I will have a backup vm that I can import.

You can convert to workstation. If you need to recover you can run converter against the workstation copy and move it back to ESXi. The benefit to workstation format would be that you can lanuch the VM using Workstation or VMware Player and have your VM running immediately.
