I am currently running successful tests of upgrading vSphere 5.5U2 to U3e.
Is there a method to understand what and if hardware drivers will be upgraded?
Is there a method to inventory hardware drivers before and after to understand if anything was upgraded?
I am struggling through the Hardware status/Software tab where there is a list of hardware and software components. Is this the only and best way?

You can add the drivers to update manger baseline and update from there .
you can use below commands aswell to identify firmware , driver version and hard wares
smbiosdump
lspci -vvv
/usr/lib/vmware/vmkmgmt_keyval/vmkmgmt_keyval

If your hardware is on VMware's HCL for 5.5u3e then you should be ok. If you are concerned about a particular piece of hardware you can manually update that hardware component's driver using the vendor provided VIB package.
