I am using auto deploy on esx 5.0. I would like to disable interupt coalescing at a host level so I don't have to do it on every vm.
I am not seeing a host profile entry for this. Is it not possible?

You can't set VM-level settings (like interrupt coalescing) with host profiles. Thats a job for your VM deployment tool.
This is a host level setting I am trying to make. Configuration - software - advanced settings - net - netcoalescedefaulton
I realize it can be set at the vm level as well. But I do not want to set it there on hundreds of vm's
