Set Default Network on New VM's

I notice whenever we create a new VM or convert a physical machine it defaults to our SAN network and not our production lan. How can you set the default network for new vm's? Also a second question is it possible to disable the local host's volume from showing up in the data stores? I do not want the esx hosts local hard drive volume displaying in the data stores since it will never be used to host vm's.

Deploy VMs from template, where NIC is already connected to desired LAN.

You can only destroy local datastore.
