Yes.
Create a VMFS datastore on the one RAID array and another VMFS datastore on the other RAID array.
Create a VM on the first datastore with a single disk also on this datastore.
Add another disk to the VM selecting the second datastore.
Install the OS on the first disk and store the data on the second datastore.
