After a year of using SAS on ESXi 4 on Windows 2008 x64 I have seen no performance issues. Only thing I have found using SAS with Windows 2008 x64 is the caching of the file system will use all available memory and not release until you reboot or use DynCache on the server. With our SAS server virtual we could add memory to increase performance.
