Would you like give me some suggestions about running virtualized sql server and exchange 2010 in the same ESXi host? Is it recommended? any best pratices white paper ?

I don't see a reason why you should not run these VM's on the same host, provided the host has enough resources (CPU, RAM, disk IOPS).
There are a lot of guides and best practices about setting up these workloads.

Remember, both these applications are built to use as much RAM as possible (they both are built to utilize as much RAM as you have available for caching by default), you'll have to tweak the settings on both so that they're aware that all system RAM cannot be consumed by them.
Other than that, it's ok.
Though I'd put them on seperate boxes just on principal.
These two applications can vary from very light to very heavy in terms of resource requirements. It's a question of understanding the requirements and deploying capacity to suit.
