Resource Allocation esx

I cannot allocation resources within esx. see attachment.  i need to figure out how to change esx server allocated resources as you can see the tocal cpu capacity is 344mhz and i cannot assign more thnan that to vm host!!!

if you highlight each item, you'll see a drop down list, you can set it to unlimited if you so choose. Or right click on the guest and "edit resource settings"
