My ESXi 4 box has two physical NICs in it (for now). I have them setup so that one is dedicated to the management interface and the other is dedicated to the virtual machines. But I have one issue - the "virtual machine" NIC is coming up and grabbing an IP address via DHCP, which overwrites it's correct entry in DNS. While this isn't a MAJOR deal, because I know what's going on, it's still an annoyance.
Is there a way to bring up the NIC so the virtual machines use it, but leave it without an IP address?

Actually NIC dedicated for VM Network can't grab IP, it operates fully on L2. Could you post screenshot of network settings?

You can delete VM Network on first vSwitch.
VM is grabbing DHCP IP, not ESX. Check Windows network settings in VMs.

Go into control panel --> network connections -->
Then untick the register in DNS (see pic)
