We're designing a new production environment which will include four ESXi v4.1 hosts. VC will not be part of the environment. Storage is a NetApp FAS2040 running DOT 7.3.4.
With these specifications in mind, is it possible for all four hosts to use the same NFS export as a datastore?

Sure NFS allows multi 'user' access - so yes, unless there is some odd limitation in the particular NetApp box in question.
As J1mbo said no problems with multiple ESXi hosts accessing a single NAS?NFS server - in fact it is one the recommended shared storage systems supporting vmotion, DRS and HA. The only thing to keep in mind is you will have multiple virtual machines accessing the same datastores so you will have to ppay attention to the disk performance as you build out your environment -
