Windows 2008 Standard is limited to 4 physical sockets - the number of cores per socket are not licenced. So considering the maximum 32 vCPU's per VM, you could get as many as your hosts suport in a 4 socket, X core configuration ... upto the maximum 32 (for example, 4 sockets, 8 cores).
I think if the host is licenced for datacenter edition, you can deploy any version without affecting your license cost - which may be an option to concider from a pricing perspective.
