Welcome to the Community,

how exactly did you create the bootable USB device?

I've used Rufus before, but not for installing ESXi.

So what I'd like you to do - to rule out issues with the image - is to verify that the ESXi image that you are using is healthy, i.e. the checksum matches the one provided by VMware.

Note that 6.0 is end of life/support, so if you’re running anything like a production workload an upgrade to at least 6.5 would be advisable.

As a.p. said most likely this is due to a corrupted. you can check VMware checksum and use 7zip CRC SHA checksums on client computer to check iso integrity.

What about formating the thumbdrive with windows and extracting files from the iso on the thumbdrive?

In case you configured the Rufus settings as shown in e.g. https://vmarena.com/how-to-create-bootable-vsphere-6-7-installer-usb-flash-drive/, then a next step in troubleshooting would be to try  another USB device to rule out a bad device.
