I have 8 nics on my VM server, how many to SAN etc.?

I have 8 nics on my VM server and have 2 going to the SAN. I will be migrating most but not all my VMs off of the server's own datastore (not SAN) to the SAN. Is 2 going to the SAN a good practice or should I put 4 on there.

I think 2 is optimum for your situation, especially as you may want to use other pNICs for vMotion, FT, ESXi management and the virtual machine network (and have NIC redundancy in those as well).

More is not always better.

Very few SANs will be able to actually push more than 2 x 1Gb to a server, so why complicate things?

The SAN itself has only 2 active nic cards anyway.
