I'm currently hosting 3 VM's on our ESXi 5.5 and I want to increase the amount that one VM is using but how can I see the total RAM usage on the host and what's available for me to allocate?
You can see the current memory usage as well as the host's capacity on the host's Summary tab in the vSphere Client.
How much additional memory you can assign to a VM not only depends on the available host memory, but also on e.g. the guest usage, whether VMware Tools are installed in the guests, ...
ESXi uses several techniques to manage memory efficiently, so that depending on the guests you can even overcommit memory. I'd suggest you take a look at http://www.vmware.com/files/pdf/mem_mgmt_perf_vsphere5.pdf for details.
