Hello everyone,
We are doing VLANs on our ESXi hosts and would like to have the VLAN traffic flow onto our physical network as well. In doing so, I am curious what the "proper" configuration for the link between the physical host and the switch should be. Do you do you enable port trunking or leave the port with default configuration?

Do you do you enable port trunking or leave the port with default configuration?
Assuming you are talking about Cisco switches then you would configure the switch ports as trunk ports. For other vendors it is be named tagged ports. Anyway, the common name for this is 802.1Q (dot1q). Please take a look at http://kb.vmware.com/kb/1004074 for a sample configuration.
