I would like to know a easy way also. i just upgraded the bios on a dell and had to use the bootable bios flash tool tell offers. this required me bringing the vm,s on the esxi offline and do a esxi server reboot. it worked but very losy option. Im sure thier is a better way.

I don't know what DELL offers. For HP it's actually a very easy process. You can download the firmware CD/DVD which is offered for your hardware from http://www8.hp.com/us/en/support-drivers.html and boot the host from this CD/DVD.

The new Dell servers have a "lifecycle" controller where you can boot into it and update all the firmware/bios on the server. Otherwise you'll have to do a boot from dvd w/ the openmanage cd or make a dos usb bootdisk and perform them that way.
There is no way around shutting down your vms though, as any bios upgrade will require a reboot.
