Guest mem peaks on all host on new esx server

Guest mem peaks on all host on new esx server, but operating system does not use much memory.

The results under are from same vm's running on different esx servers

HP DL380 G6

Dual CPU 8 cores

Intel Xenon E5520 2.27GHz

EVC mode Intel Xenon 45 nm Core2

Guest mem 95% +

HP DL380 G5

Dual CPU 8 cores

Intel Xenon X5450 3.00GHz

EVC mode Intel Xenon 45 nm Core2

Guest mem typicaly 25% to 35%

The 3 that peaks are on new server.

On the new G6 the memory settles down after a while if i manually set:

Use Intel VT-x/AMD-v for instruction set virtualization and Intel EPT/AMD for MMU virtualization

If i move servers to G5 all is fine, move them back it peaks on mem. waited to se if it settles down, but no go.

PS we have set EVC mode on the cluster.

New booted servers on G6 still peak on Guest mem.

Any thoughts?
