When I'm trying to deploy a new VM I don't see the option to select 'windows server 2012 r2'. I'm currently on esxi 5.0 469512 & vcenter 5.0 295542
This is normal, VMware has not implemented a dedicated selection option for 2012 R2 as they don't need to differentiate between the two versions, you can just go with the plain 2012 option. See this article:

You're running the completely unpatched, old ESXi 5.0 GA version from 2011 that is full of issues and security holes. 2012 R2 is also only supported from 5.0 U2 onwards:

Upgrade to a recent ESXi version (preferably a recent 5.5 or 6.0 version) before you try to install 2012 R2 guests.
