Encrypting VMs

We have a requirement ( HIPAA and Meaningful Use ) to encrypt patient data on our servers, which are all VMs in an ESX 5.5 environment.

I know Bitlocker is not supported, but am curious what other viable options ( aside from encrypted hard drives ) we have to meet this requirement?

We are doing it through the OS - we are using CentOS and when we go through the setup do the encrypting there.  That means though; someone must be available to enter the password if the system has been rebooted.
