In the VM, we have the VMware Tools installed. There's a feature in the tools called "Yime synchronization between the virtual machine and the ESX Server".
My question is, how often does it "Synch"?

By default, the daemon checks the guest operating system clock only once per minute. You can specify a different period by

A few more notes to consider.
It is our understanding that the synchronization has been greatly improved in vSphere 5 with the latest tools. If possible, you will want to use that.
Also, for performance reasons, you should make sure you are only synchronizing with one time source for any guest. Using NTP and the tools sync can muck with the performance...
In general, our rule is to let Windows guests synchronize time with the domain servers, let Linux guests synchronize with the ESXi hosts, and let the ESXi hosts synchronize with ntp... Whether that is a good policy or not is probably up for debate, but we are careful not to have more than one source of time for any guest.
Sorry, I forgot to mention that these servers are in our DMZ and there is no Domain controller or Domain at all.
They are all Windows VM's though.
