I have a Cluster with two HP DL380 G6 (Xeon X5560) servers and i want to add another server HP DL380 G7 with these Types of CPUs:

I want to know that, which of these CPUs can use with EVC Mode in my Cluster?
vCenter can also help to find the right baseline.
Just try to enable EVC on your cluster of old CPU: the only one that can be enable (without power-off the VM) is the right one
If you're mixing those two CPUs in an EVC cluster you'll need to set the EVC mode to Intel Nehalem. See the KB article here for more info - http://kb.vmware.com/kb/1003212.
