Hi,

There is some solution to get backup from VM:

  1. Native solutions such as exporting VM as OVF or OVA
  2. Using third-party software such as Nakiv Backup & Replication and Veeam Backup & Replication:
    • You can use the software to get backup and store them on another location

But about ESXi, there is no recommendation about backup whole ESXi server, just you can get backup from its configuration and after reinstall (Fresh installation), you can restore the confiurations on the new ESXi:

Backing up and restoring ESXi configuration using the vSphere Command-Line Interface and vSphere Pow...

Don't create image from your ESXi disks because you may be faced with some issues after restore.
