Is there a setting / method to deplpy new VMs with hardware version 7 (and NOT HW version 
on a vSphere 5 host ?
We currently have a mixed cluster (vSphere 4.0 U2 & 5.0 U1 Hosts) with automatic DRS enabled.
NB. I've found that vCloud Director 1.5 has a VM HW version setting (v7 or v8) which is useful for mixed clusters. I'm hoping that vSphere itself may have a similar setting.

Yes, that's certainly possible. Just select "Custom" in the "New VM" wizard and you will be able to decide which HW version (7 or you want to use for this VM.
