I have some ESXi 5.0 servers member of a vSphere environment.
I need to change the address of one of the DNS servers.
I see I can change it from the console, but to apply changes I need to restart the Management Network: can this create problems to the users using VM hosted by the ESXi server or can I apply the changes while users go on working?

Yes you can change them without affecting the running guests.
You can change them through the viclient under Configuration | DNS and Routing also.
You should be fine to restart the management network while guests are running.
So you need to change the host name of ESXi host.
As per the Vmware recommended procedure, you need to place the ESXI host in maintenance mode first.
(No VM should be there in the ESXI),
(If its a standalone host, not a member of ESXI and its a lab you can do it online)

For changing the DNS settings you do not need to enter maintenance mode, i assume from the question that is what was asked and not changing the hosts name?
If only DNS setting then you can just change that and restart the management agent.. there will no issue.. misunderstood as change in hostname FQDN and DNS..

I only need to change the IP address of the DNS servers.
Imagine the IPv4 setting of one ESXi are:
I only need to change the IP of DNS server 2 form 192.168.1.51 to 192.168.1.52
