Best way to set CPU affinity for testing purposes

We want to use CPU affinity for a day or maybe just a few hours and give a certain VM (Windows 7 64 bit) its own processor to test a huge Excel spreadsheet when it does a bunch of calculations. We don’t need to worry about vMotion or DRS since it’s a View VM and it stays on its own host with the other View VMs.

So what would be the best way to test this out and what would I put in the Advanced CPU section for processors? And do I need to do anything to the other VMs on that host so they don’t use the processor I setup for the one test VM? Does setting affinity bypass the scheduler as well?

The server is running ESXi 4.1 U2 and has 4 physical CPUs with 10 cores each. Under the options for the VM it says there are 40 logical CPUs available. I read that 0 and 1 are used for VMware specific tasks though.
