Have you setup the dump collector and syslog to capture errors? Have you made any hardware changes recently? Did you check this article?

Can you please advise the Server hardware model?CPU (intel or AMD)? thrid party software? and if the server was used in previous version of ESXi eg. ESXi 4.1

If that fit your scenario it is certainly the next thing I would try.

Another thing I want to add, in previous versions of intel processors there was feature called C state and C1 state, this feature will power off some of the cores if it weren't being used and highly recommend to disable it from the Bios. not sure if it is being present with same name in E5 & E7 processors
