Have you setup the dump collector and syslog to capture errors?  Have you made any hardware changes recently?  Did you check this article?

  • I install vSphere 5.0U1 at 2012/08/08 T04:06
  • setting IP,dns,getway,NTP
  • p2v a windows 2003 server to it.
  • browser datastore(only one datastore:internal hdd)
  • copy the vmdk which is from p2v to new folder
  • close vSphere Client about at 2012/08/08 T10:00

If that fit your scenario it is certainly the next thing I would try.

go ahead and try it... nothing to loss Smiley Happy

Another thing I want to add, in previous versions of intel processors there was feature called C state and C1 state, this feature will power off some of the cores if it weren't being used and highly recommend to disable it from the Bios. not sure if it is being present with same name in E5 & E7 processors

please keep us posted
