We have recently updated Office 2013 to 2019 on our VDI Golden Image. Items such as Signatures in Outlook and some other customizations are not being transferred from their old 2013 DEM settings to 2019. I've seen the sample xml template for 2007 to 2010, but it's mostly irrelevant for 2013 to 2019. I would love it if someone out there that's come up with a good template could share.
