Virtual to Virtual conversion

I have a VM that has an 800Gb disk that needs to be reduced
in size to accommodate the data that is actually on the disk about 150Gb. A V2V
conversion seems to be the best solution create a clone then V2V on the clone
as the VM is in constant use. What I need to do is apply any changes made to
the original whilst the conversion is underway. Is there a way to snap shot the
original then apply the snapshot to the clone?

In the Summary Wizard, ensure the synchronization option is selected for ensuring the data is in sync with old server and new VM

This is not an option in this case as the old VM would be the clone prior to conversion,

The vm with the snapshot would be the production vm.

The reason for using the clone to convert is the time factor. Converting the original could take hours in a 24x7 system this is not an option, even at this point I am not sure if I can take it down long enough to clone the production VM, to allow the change to go ahead. This is why I am exploring options.
