You can do a normal conversion and resize the harddisk afterwards. You need to use vmkfstool to resize the virtual harddisk (see the manpage in the service console: -X). Then boot from a rescue CD and use gparted to resize the partitions (or directly use the the gparted bootable cd from http://gparted.sourceforge.net/livecd.php for resizing)
