I'm going to assume you want to learn about vSphere, since it is the base server virtualisation platform that other technologies build on.

In terms of formal official learning, the training associated with the VCTA-DCV would be a good start for a total newcomer: https://www.vmware.com/learning/certification/vcta-dcv.html

Some simple things you can do are watching Youtube videos to get familiar with all the aspects of VMware. I find this helps me a lot.
