Data Restores to spanned disks

We use two systems to perform our VM disk backups. The first is vRanger and the second is Tivoli Storage Manager. We have a situation where a VM has a VMDK file that is 600gb. In production, it resides on a LUN that is 1TB large. Now, here's the question: we are about to test our DR plan at a remote site that is leased. So, the virtual infrastructure is built up from scratch. The Fibre SAN at this remote site has 500gb disks setup. So, you see the problem is in restoring the data on this VM 600gb disk. The procedure we use is to have vRanger backup just the system disks and the data (larger) disks are backed up by Tivoli. So, the thought is that we restore the VM with its system disk via vRanger at the remote DR site (which will have its own vCenter and, as I said, its own SAN with DataStores already created). Then, once the VM is available, go into the VM and create 2 350gb vDisks (2 vmdk files) and the span the two disks to be one 700gb volume. Once that is done, restore from Tivoli the 600gb DATA onto the spanned volumes. But, my concern is that while these two disks are viewed by Windows as one (spanned), will the data be restored to them since they are, in actuality, 2 vmdk files (vDisks)? Will this plan work?
