According to documentation it is better assigning appstacks to computer accounts, but if you do not have provisioned all machines up-front, is there any way to assign appstacks if computer account does not exist ?

No, I don't think so. When you assign AppStack to computers, it gets attached 'immediately' so the computer should be available for that.
Yes, you entitle OU's of computers. The AppStack mounts after the computer has been created and comes online.
Correct, and just to add to this. When using machine attachments, you may encounter issues during the composition process. To mitigate this:
- Before taking your snapshot perform:
1. sc config svservice start= disabled
2. sc stop svservice
- Post customization script to restart services batch file should have:
1. Sc config svservice start= auto
2. Sc start svservice
3. Final restart of VM is recommend.
We do the post customization in a .cmd as a Post-Sync script for the Pool. Also note that the "start= auto" has to be entered with the equal sign and the space as I typed it. It didn't seem to work if there were additional spaces or typed slightly differently.
