Why everybody do not recomendate use 3.0 ?

Though 3.0 brings in lot of new features like App Toggle, it is recommended to use the existing 2.10 version for production environment. If you are trying App Volumes for the first time, be sure to consider App Volumes 3.0 in the test environment. Please have a look at the release notes here:

in my test environment  i have a 2.1 (that what i can download for tial)

now it's time to go to production, and i try understand what version better use

Do you mean 2.10 version? If yes, please go ahead and use the same for production.
