The Solution was posted in an other Post:

https://communities.vmware.com/t5/App-Volumes/Writables-volumes-change-Windows-search-path/m-p/2848470#M8474

Hi all,

here is the support answer, may be it will help someone:

This is a normal behavior of writable volumes, AV skips its search index redirection if it finds that an override is already set, whether by DEM, a GPO, the Control Panel Indexing UI, or a direct registry setting. The values checked by AV are

Key HKLM\Software\Policies\Microsoft\Windows\Windows Search
  Value DataDirectory

  Key HKLM\Software\Microsoft\Windows Search
  Value DataDirectory

If neither is set, AV sets the second value, e.g., to
  C:\SnapVolumesTemp\writable\persistent\Search\Data\

Is there a way to configure Vmware App Volume to save only the .ost files for outlook cached mode and make the Windows Search over FsLogix ?

The Problem is that if you activate over DEM Manayer App Volumes Settings : Store Offline Outlook Data File .ost on writeable
The Windows Search for Outlook will be also on the snapvolume. Because the index of the windows search is always renewed at each logon we will go with FSLogix to avoid that. But we can't exclude the Windows Search from App Volume.

Thx for your help!
