Because you're looking in the wrong place. You want the CPU compatibility list, not the server list.

If you're running vSphere 6.7, when you enable EVC mode (or just edit) in the GUI it will show you if hosts are or are not compatible with the EVC mode selected. Start at the highest level (Skylake) and work you're way down until the Compatibility section shows there's no host that have issues. I am used to looking at the Compatibility Matrix, but it can be confusing and overwhelming to someone not used to it so I'm glad that they added this check into the GUI.

You have to select "Sandybridge" as EVC Mode for your cluster.

The list within the GUI is sortet by the historical release date of the CPU which makes is easy if you have some Intel CPU knowledge. There was a big jump with the Nehalem 55xx CPUs followed by the Westmare which named 56xx. Than it starts with the E5- v0, v1, v2, v3, v4.

Enabling EVC during runtime is a easy job when you have Intel type CPUs as long as the newer CPU have the same or more CPU features. This isnt the case when you have partiell mitigate against Spectre,Meltdown and Co.

Regards,

Joerg
