I do not know the release dates for support, but I can tell you that I have both Windows 2008 Server Core and Windows 2008 Server installed and functioning w/o problems in VI3.
I think the announcement is more of a chicken and egg problem. VMware cannot really announce support for an unreleased product. They could - but if something suddenly changed in WIN2k8 which caused problems, that announcement would need to be retracted.
However, as renehasp notes, you can run it now without any problems.
I would expect to see support announced by VMware very soon after the offical windows release.

2. Yes you can install in in VI3 under Guest OS version (Microsoft Vista) but you can not deploy vm's from templates in a clean manner and I simply can not take a risk of deploying production 2008 servers at our company, without VMware officaily supporting it not to mention I don't even know if vmtools is really working the right way on 2K8 since it thinks it's VISTA.
If anyone hears some type of timeframe for a release dates or support.It would be helpful..
