My question is, can VM's be moved from my VMware Workstation version 6.0 to VMware Server?

With your VM powered off - preferably no snapshots etc
Select the VM menu, "upgrade or change version" and a wizard will guide you and tell you what each of the 3 versions you can select is compatible with.

Liz is correct, you will need to use the WS 6 "Change Version" menu option to downgrade the virtual hardware in the VM to be compatible with VMware Server.

When I Perform the steps you outlined, I see:
Compatible Products:
ACE 2.x
Fusion 1.x
Workstation 6.x
"ESX Server Compatible" is grayed out. The Guest OS is Windows Server 2003.
When you say downgrade, do I have to select "Workstation 4 or 5" from the drop down to downgrade the VM, then ESX Server will be selectable?
Is the Free Virutal Server "ESX Server"?

Just select Workstation 5 compatible.
No, ESX Server is NOT the (free) VMware Server. There's no need to select that compatibility mode in your case.
In my case, I am trying to move Groundwork Monitoring Open Source appliance built on CentOS and trying to move it to an ESX 2.5 server. How do I enable the ESX Server Compatible checkbox? If I have to buy a product, please let me know by today.

You need to set compatibility to Workstation 5 mode before you can check the box for ESX-compatibility.
It may be easier for you to just use the VMware Converter to migrate your VM to an ESX server.
