In fact, you've got to test in real ESX production the difference of INTEL QUAD CORE and INTEL DUAL CORE.

OK OK, how beautifull words isn't it ? but what is between your VM and the CPU CORE ? ESX MicroKernel. and is "ESX MicroKernel" in the "certain applications" familly ?
Yes you've got it, if the Microkernel isn't able to take the full power of the quad core cpu familly, there are no difference between 4CORE and 2*2CORE.
And yes, 4CORE are faster than 2*2DUALCORE, but with "certain applications" not all the applications we have
Ask VMWare some benchmark, you'll see

Is there a good vmware benchmarking tool? I will probably be ordering a dual quad core server and I can run it against a 4-way dual core server.

Why not 2 Quad Cores? There is no much difference in princing and the performance will be better.
