About NSX-T LB: Is it a way to define which backend server is served with the inserted cookie value ? As LTM F5 does for example.

Cookie value for example:

Not to my knowledge at this time, no. The L7 load balancer in NSX-T is currently very basic. The Avi technology (NSX Advanced Load Balancer) may offer this.
