I'm onsite with a customer and I've built a PoC of Horizon 7.9 with UEM 9.10 and App Volumes 2.18
The last part of the puzzle is to migrate the application settings of each user from their homedirectory P:\<username\AppData\Roaming (Win 7) to the DEM Profiles share at \\<fileserver\DEMProfiles\<username>\AppData\Roaming (Win10)
Does anyone have detailed instructions on how this is done?

I take it that those folders are redirected AppData folders? That's not how DEM/UEM works, I'm afraid...
You'd have to run DEM in the Windows 7 environment, configured to export settings for the users' applications. Those exported settings can then be used in the new Windows 10 environment.

On the Win7 side, those are redirected folders. On the Win10 side, other folders (Documents, Desktop etc) are redirected by Group Policy but the AppData part is redirected by DEM to the DEMProfiles share.
So what needs to happen is that I have the DEM Agent installed on the Win7 Desktop, wait for them to login and out once, and then the application settings will be under the DEMProfiles share ready for Win 10?

Correct. Assuming that you have created or downloaded the Personalization config files for the applications you want to capture the settings for, of course.
The personalization Config Files have already been created.
One final thing, what in particular do I need to configure on the DEM Agent under Win7 in order to export the settings to the DEMProfiles share?

The absolute minimal configuration for the DEM agent would be:
In a slightly less minimal scenario, you might also want to configure logging, so you have a bit more insight into what exactly is going on.

I have a further problem. I have installed the DEM agent onto a Win7 desktop but when I log in as a test user, the UEM agent forces the Appdata to come from the share (where it should go) but not from the Home Directory (where it should come from)
Any ideas?

Not sure if I understand correctly, but based on your previous statement that "the AppData part is redirected by DEM to the DEMProfiles share": maybe you can put a condition on that folder redirection configuration in DEM?
